The usal (उसळ) is usually prepared from bean sprouts (and sometimes other pulses) and packs in a punch of nutrition.
The thin spicy oily gravy is known variously as kat (कट) in the Kolhapur region, sample (सांपल) in the Pune region, tarri (टर्री) in the Nashik region and otherwise generally as rassa (रस्सा). Fiery hot, it works nicely to set your tongue on fire!

Gobi manchurian
The all-time favorite Indianized-Chinese cauliflower fritters tossed in tangy sauce with spices and herbs, more commonly known as Gobi Manchurian... Catered to suit my spice-loving palate! :)
